First up in my line up of spiralized Nigerian vegetables are Garden eggs...(read a little more about garden eggs here.) You can spiralize by cutting into small strips, there are machines for that though(Betanoodles' remark).

Garden eggs (Aubergine family) are every where in Nigeria and they are mostly eaten raw as a snack. They are also cooked/stewed and served with boiled yam.

Spiralizing garden eggs, takes them to another level.  In this recipe, I demonstrate how you can spiralize them, stir fry them and serve with some grilled fish or chicken, a completely radical approach...Now you can serve garden eggs for lunch or dinner, in style. Excellent for those watching their calorie intake and its so so filling and delicious.

What you need

What to do
  1. Wash your garden eggs and spiralize following manufacturer's directions. 
  2. Also chop the onion, red and green peppers. In a wok, heat some red palm oil (do not allow it to smoke before you add the chopped peppers and onion. 
  3. Stir briskly to avoid burning. The add a generous amount of the ata din din or spicy red pepper sauce.
  4. Stir all together. Then add the garden egg noodles. Stir all ingredients together until well combined. Add freshly milled black pepper and sea salt.
  5. Stir and allow to simmer for about 2-3 minutes until the garden eggs noodles become soft. Consider adding a sprinkling of water is the noodles are drying out. 
  6. Serve hot with some grilled fish or chicken.

Jollof Pasta

If you lived in Nigeria, this is one of those dishes you learned how to cook first. Well this and concoction rice. I would have to give credit to our house-help at the time as she taught me how to make this. It has somehow stuck with me till now and I always try to vary it with the ingredients I add to it. Sometimes I add raisins, grounded peanuts, beef, chicken etc. It’s one of those dishes you can manipulate in terms of ingredients and cooking techniques. Some people I know boil the pasta separately, fry the stew and mix it together in one pot. Others fry the stew, add the raw pasta and pour water and boil it till the water dries up. Personally, I think the former method works better as waiting for water to dry sometimes can make the pasta too soft. Enjoy my variation of Jollof Pasta.

My move to Nigeria has made me realize I really miss authentic Asian dishes and stir fried noodles with chicken is only one of them. On that list I also have basil thai fried rice, pho, steamed bao and other yummy things that I should not bother listing. If you have ever requested to have noodles at Nigerian weddings, you would see that some caterers use glass noodles but some also use other types of noodles. Glass noodles are the quickest to make, in fact you may not even need to boil them. Just soak them in hot water and stir fry with your sauce after and voila it’s ready. This was honestly the fastest dinner I have ever made and I think once you have all your ingredients you are good to go. If you are like me and love your Asian inspired dishes or like my Nigerians will say Chinese noodles, then whip out your pan and get to stirring.

  • Method
  1. Step 1
    Place noodles in a heatproof bowl. Cover with boiling water. Stand for 2 to 3 minutes or until tender. Using a fork, separate noodles. Drain.
  2. Step 2
    Meanwhile, heat a wok over high heat. Add 1 tablespoon peanut oil. Swirl to coat. Add mince. Cook, stirring with a wooden spoon to break up mince, for 8 minutes or until browned. Transfer mince to a bowl, draining fat. Add remaining peanut oil to wok. Swirl to coat. Add brown onion and garlic. Stir-fry for 1 minute.
  3. Step 3
    Add broccoli, corn, carrot and capsicum. Stir-fry for 3 to 4 minutes or until tender. Return mince to wok. Add soy sauce, barbecue sauce and sesame oil. Stir-fry for 1 minute. Add noodles and green onion. Stir-fry to combine. Serve.

    Tips: Use canned baby corn spears instead of fresh
